Apple Tarte Tatin
This is a great treat to celebrate the autumn apple season but with cooking apples able to store and be used throughout the year there’s no reason it can’t be enjoyed at any time. There’s so many delicious ways to serve this dish, whether it be with clotted cream, vanilla ice-cream (you’d do well to beat Paravanni’s) or our farm shop’s irresistible raw double cream from nearly Oaklands Farm.
Ingredients
Tart:
- 2 Large Cooking Apples
- 200g Castor Sugar
- Large Knob of Butter
- Star anise x3
- Puff Pastry
Method
- Place sugar in a heavy based oven proof frying pan, caramelise with the star anise and add butter once caramelised.
- Peel and slice apples and brown slightly in caramel.
- Roll out puff pastry to size of the pan and lay over the top of the apple & Caramel, tuck down sides using a wooden spoon.
- Bake for 10-15 mins at 170 degrees C until golden.
- Remove from oven and turn out onto a serving plate so pastry is at the bottom and apples on top.
- Dust with icing sugar.
- Serve with your favourite accompaniment.
