Venison Marinade – and all other game


Venison Marinade


400mls Red Wine
100 mls Port
1 sprig Fresh Thyne
2 juniper berries
1 garlic Clove
1 bay leaf

How To:

Mix the marinade red wine and port together in pan and reduce by half. Cool then add remaining ingredients. Add Venison to marinade cover and leave for between 12 and 24 hours.
