Portuguese Beef Stew
Ingredients:
Olive Oil
About 700g chopped braising steak
Teaspoon salt
¼ teaspoon black pepper
1 large onion, thinly sliced
2 green peppers, thinly sliced
6 garlic cloves, crushed
6 tablespoons tomato puree
350ml water
2 bay leaves
1 tin tomatoes, chopped
1 green chilli, finely chopped
2 tablespoons fresh parsley, finely chopped
250g ditalini (small pasta) or
use spaghetti broken into pieces
How To:

Season beef with salt and the pepper. Sauté in batches til well browned on all sides In a big heavy pan using the olive oil, set aside

Add onion and green peppers to the pan and cook til softened, about 6 mins

Add garlic and chilli, cook for 1 min, then add puree and cook for 2 mins stirring all the time

Add tomatoes, water, bay leaves, a little salt and the beef. Bring to the boil

Reduce heat to med/low and cook for about an hour and a half or til beef is tender
