Lentil Burgers
Ingredients:
475g cooked green lentils
240g mashed potato
240g crumbed brown bread
50g each of sesame seeds, sunflower seeds, and optional chopped almonds or cashews
1 garlic clove, crushed
1 onion finely chopped
1 bunch any fresh herbs
Salt & pepper
Oil for frying
How To:

Mix potato and lentils well

Add breadcrumbs, seeds and nuts, onion and garlic

Finely chop herbs and add with salt and pepper

Mix everything

Get hands messy and make burger shapes

Heat oil in pan and fry burgers over moderate heat approx 5 mins each side

Serve in rolls with salad and choice of chutney, cheese, sauces etc.

To make spicy burgers add ¼ teaspoon harissa to mash potato before mixing into lentils – more if you’re brave!
