Bacon & Binham blue Pasta

Ingredients:

Olive Oil
8 rashers back bacon, cut into pieces
250g broccoli (small head) cut small florets
200g mushrooms, sliced
1 red onion, finely chopped
2 courgettes, thick slices
150g binham blue cheese, cut into bits
150ml double cream
(or marscapone or crème fraiche)
Pasta or spaghetti
Black Pepper

How To:

  1. Steam or boil broccoli and courgette for 3-4 mins, set aside

  2. Fry bacon and onion in olive oil for 3-4 mins

  3. Add mushrooms and cook for further 4 mins

  4. Add broccoli and courgette and mix in

  5. Add cheese until it starts to melt then add cream and cook till sauce just starts to bubble

  6. Turn off heat and toss in cooked pasta

  7. Serves with freshly milled black pepper and salad dressed with olive oil & balsamic vinegar
