With the apple season well and truly here, we thought we’d ask our Gardeners Kitchen chef, Wayne, for a mouth-watering apple and blackberry crumble recipe. Enjoy!
4 x large cooking apples peeled and chopped
2 x braeburn apples peeled and sliced
1 x vanilla pod
100g Brown Sugar
1 x cinnamon stick
1 x tbsp chopped tarragon
100g Plain Flour
100g Ground Almonds
50g Flaked Almonds
100g Demerara Sugar
Gently stew the cooking apples, vanilla pod, brown sugar, cinnamon stick and tarragon. When stewed, add the braeburns and blackberries and mix through. Heat for a further 3-4 mins.
Rub the crumble ingredients together and bake separately (for crispiness) in an oven for approx. 20-25 mins at 180 degrees.
Place the stewed apple mixture in a dish and top with baked crumble and cook in the oven (180 degrees) for a further 15 – 20 minutes.
Serve with custard or cream – truly delicious!
